For better or worse, I rarely think about the meat I put in my mouth beyond a) what animal is it from and b) is it fresh. This New York Times article trains the spotlight on a remarkable organization in Rhode Island that works to preserve heritage livestock and proffers a number of bizarre facts about the state of this country’s meat and dairy market.
